TWO-DAY COURSES
Our two-day classes feature preparations that simply can not be taught in a one-day class. Artisan Breads and Breakfast Bakery are in-depth classes teaching the art, science and techniques necessary to not only recreate the recipes we provide, but also the base knowledge to proceed further with it on your own. All of our courses are designed to teach the complete novice as well as the nearly professional amateur that can’t stay out of the kitchen.
Artisan Breads - $295 per person
Americans have fallen in love with traditional European artisan breads. Now you can learn the craft of artisan bread baking in our two-day Artisan Bread Baking Class. Students will develop an understanding of how breads differ in their characteristics and the methods required to develop them. Recipes may include: Sesame Semolins Batard, Ciabatta with Olives, Focaccia with Pesto, Fougasse with Fennel and Bacon, French Baguette, Brioche á Tête, Pain au Levain, and Pizza Margherita.
Breakfast Pastries and Specialty Breads - $295 per person
This two-day class will take the students from simple ingredients to butter rich Danish, croissants, sweet breads and brioche. There is nothing better than the freshness and quality of a breakfast pastry prepared in your own kitchen. Students will prepare laminated and egg-rich doughs the first day and shape, proof and finish the second day. Recipes may include: Pain au Chocolat, Classic French Croissant, Cherry-Cheese Danish, Bears Claws, Braided Apple Danish, Brioche with Poached Pear and Almond, Brioche á Tête, Cinnamon Sweet Rolls and Custard Streusel Kuchen.
